catering help being looked for in Pasadena, TX area.

I was asked to look at organizing a bbq at work.  Currently several site folk want to do the meat as a bbq contest but we are looking at a catering firm that can help with the sides preparation (slicing the briskets...) and attendants for the serving lines.  We are thinking about doing it as a peoples choice but that may prove difficult so may look at trying to find some judges and blind boxes.  Anyone have suggestions on who may do such or be interested in it do not have final count yet but told to expect around 500-600 people.
