Stan - welcome to the Forum - We don't have a problem with cooks pre-trimming their meat before arriving at the cook-off site just make sure that you don't marinate or season prior to arriving on site.
If the flyer states that the meat will be inspected - it would be best to check with the Promoter - but I feel that it is a lot more sanitary pre-trimming at home if you don't have an RV to do it in.
