Just thought I'd share this great recipe with the community

Easy Cheesy Stuffed Chicken



Prep Time: 30 min
Total Time: 1 hr 25 min
Makes: 8 servings

Ingredients
    * 2 Tbsp. butter or margarine
    * 2 zucchini, shredded (about 2 cups)
    * 1 onion, chopped
    * 1 pkg. (6 oz.) Stove Top Stuffing Mix for Chicken
    * 1 cup KraftFinely Shredded Italian* Five Cheese Blend
    * 2 chickens (5 lb.), quartered
    * 3/4 cup Kraft Honey Barbecue Sauce

Directions
   1. HEAT oven to 400?F.
   2. MELT butter in medium saucepan on medium heat. Add zucchini and onions; cook and stir 2 min. or until tender. Remove from heat. Stir in stuffing mix and cheese until well blended.
   3. INSERT fingers carefully between the meat and skin of each chicken quarter to form a pocket. Fill pockets with stuffing mixture. Place, skin-sides up, in large roasting pan.
   4. BAKE 45 min. or until chicken is done (165?F). Brush with barbecue sauce. Bake 5 to 10 min. or until heated through.

Boneless/skinless chicken breasts
Jalapeno (1 per 2 chicken boobs)
Fresh cilantro
lime juice
cream cheese
bacon (of course)

clean, deseed and dice jalapenos
soften cream cheese in microwave for 10s
pound chicken breasts flat

mix cream cheese with cilantro, jalapenos and a bit of lime juice
spread cream cheese mixture onto non-smooth side of chicken boob and fold over
wrap with bacon (I used 3-4 strips per breast)

bake at 350 for 30 minutes and finish at 450 for the last 10 to get a nice crispy brown.

I ate two myself tonight, but I'm trying to gain weight. 1 would do a normal eater, I think.
