Why doesn't IBCA require teams to cook pork butt or shoulder when the "Jack" and most Invitationals require you to cook pork butts or shoulders?

Just curious!

Pork just isn't that popular in Texas - and the way that the criteria reads for the Jack and American Royal - THe meats required are
Beef Brisket, Pork, and Chicken

Our categories are covered with the Pork Spare Ribs - we do have some events that include Pork but not very many

I wanted to, but it's too hard for the whole team (everyone out of state) to make it just two weeks in front of Hammond. The whole crew will be in the house for Hammond!
