Just a heads up to anyone that may be thinking about attending this event - you must at least call the Health Dept and let them know that you are thinking about coming so that they can bring a Temporary Health Permit out for the team.
New Mexico Health Dept seems to be very strict and it is required that all cooking teams have a Temporary Health Permit.

Items that you will need -
water container with spicket that will allow the water to run freely
3 containers (bus tubs) for washing dishes - one for soapy water, one with bleach for sanitation, one for rinsing
This looks like it will be a great event $7500 prize money and a State Championship

Looks like a fun event and a good venue. I think we might head out west that weekend.
I hear several north/central Texans are going.
FYI. We have cooked in New Mexico and the health dept is pretty strict. Be prepared to show all equipment listed on their web site. You will be required to show these things to the health inspector in order to cook the comp.
Also, it says this permit must be faxed to them at least 10 days before the event in order to get your permit and be able to cook.
